From the moment I started using drips to fry cracklings I realized that this ingredient makes all the difference and I don't do it any other way! Ingredients to make pururuca crackling with drips:

 250 grams of pork belly

 ¾ cup of water (180 milliliters)

 ¼ cup of pinga (cachaça)

 1 tablespoon of salt

How to make pork rind with drips:

First, cut the cracklings into pieces and sprinkle with the salt. I recommend using pork belly in this recipe because it contains more fat, so your crackling is more crunchy. If you prefer pieces of bacon with more meat, use panceta.

Tip: The smaller the crackling pieces, the less time it will take to cook.

Place the bacon in a skillet or pan, add the water and the drips and bring to medium heat.

As the bacon releases its fat it will fry in it. Stir from time to time, carefully, to avoid burning. Let the bacon with drips fry until golden and crunchy.

Tip: Lightly cover the pan so the crackling does not spill any fat on all sides.

Another way to make cracklings at home is using a pressure cooker. This technique has the great advantage of not making as much mess, but you will need to add oil. In this recipe for crackling with drips in the pressure cooker that I share with you, you also have baking soda, it helps to achieve a crispier bacon skin.

See how to make crackling in the pressure cooker with drips:

Season 1 kg of pork belly with 1 tablespoon of salt, 2 tablespoons of drip and 1 teaspoon of baking soda;

Place the pork belly and a drizzle of oil in the pressure cooker, close and cook over high heat for 30 minutes;

Remove pan from heat every 10 minutes and open to stir the bacon, return to high heat covered to continue cooking;

At the end of the indicated time, your bacon should be covered in fat and very golden. Remove with a slotted spoon and allow to dry on a paper towel plate or on a cooling rack.
